Carrot Cake for Hari Raya

Salam all,

Raya this year saya berjaya membaking Carrot Cake. Resepi from Mamafami memang sedap dan lembut jer. Seperti komen komen orang yang dah pernah cuba before this.Sangat gembira bila kek nie menjadi. Resepi seperti di bawah.



2 1/2 cups self-raising flour
1 1/2 teaspoons baking powder
1 teaspoon bicarbonate of soda
1 1/4 teaspoons cinnamon powder
a pinch of salt
3 /4 cup brown sugar
3/4 cup castor sugar (or less)
4 eggs
1 cup corn oil
100g margarine ~ melted
200g grated carrots
150g grated green apples - kita x letak cuma extra kan carrot
30g roughly ground almonds


250g cream cheese
4 tablespoons butter
1/3 cups icing sugar ~ sifted
1 teaspoon lemon juice

* Mix all the ingredients and beat till light and fluffy. Spread onto cake.

Method :

1. Sift flour, baking powder, bicarbonate of soda, cinnamon powder and salt into the mixing bowl.
2. Add in the rest of the cake ingredients.
3. Stir on slow for one minute and medium speed for another 2 minutes.
4. Grease a 9 inch baking tin with butter and line with greaseproof paper. Pour the mixture into the tin.
5. Bake in a preheated oven at 180 C for 45 minutes to 1 hour depending on your oven.
6. Once baked, leave to cool completely before spreading with cream cheese frosting.
